Beetroot, Feta & Potato Salad

This potato salad has the perfect balance of sweet and salty from the beetroot and feta cheese.  A wonderful side salad – delicious!

  • 500 g new potatoes (halved or quartered dependent on the size )
  • 50 ml extra virgin olive oil
  • 1 tsp Dijon mustard
  • 1 tbsp fresh chives (finely chopped, plus extra for serving)
  • 8 small cooked beetroots or 4 large (halved or quartered)
  • 100 g feta cheese (cubed)
  • 1/2 red onion (peeled & sliced)
  • sea salt & pepper (freshly ground)
  1. Cook the potatoes in boiling water until cooked through and tender, drain and set aside.
  2. Mix together the oil, mustard and chives. Add to the new potatoes and stir through.
  3. When the potatoes have cooled slightly add the beetroot, feta, red onion and season to taste. Enjoy!
