Mint Pesto
This mint pesto is a delicious alternative to basil pesto. It goes wonderfully well with lamb, drizzle over fish or mixed through new potatoes.

Instructions

Place the pine nuts, mint, parsley, lemon zest, Parmesan, mint sauce (optional) and oil into a blender or food processor. Blitz and season to taste, you can add more mint sauce to your liken. Enjoy!
