Mint Pesto

This mint pesto is a delicious alternative to basil pesto.  It goes wonderfully well with lamb, drizzle over fish or mixed through new potatoes.

Ingredients
  • 50 g toasted pine nuts
  • 1 large handful fresh mint leaves
  • 1 small handful of flat leaf parsley
  • 1 lemon (zest only)
  • 15 g Parmesan (grated)
  • 1 tsp mint sauce (optional)
  • 125 ml extra virgin olive oil
  • sea salt & pepper (freshly ground)
Instructions
  1. Place the pine nuts, mint, parsley, lemon zest, Parmesan, mint sauce (optional) and oil into a blender or food processor. Blitz and season to taste, you can add more mint sauce to your liken. Enjoy!
