Broad Bean, New Potato & Tuna Salad

Ingredients

new potatoes
(halved)

shelled broad beans
(ready to eat)

red onion
(peeled & finely sliced)

tomatoes
(chopped)

tin of tuna
-
sea salt & freshly ground pepper

handfuls of rocket
For the dressing

ml
extra virgin olive oil

Dijon Mustard

garlic clove
(peeled & finely chopped)

white wine vinegar

lemon
(juice only)

anchovy fillets
(drained & chopped)

capers

sea salt & freshly ground pepper
Instructions

Bring to the boil a pan of salted water and add the new potatoes, boil for 8-10 minutes until tender. Drain the potatoes and place in a bowl of iced water.

For the dressing, whisk together all the ingredients, season to taste.

Place the broad beans, potatoes, onions, tomatoes and tuna into a large bowl. Drizzle with the dressing, gently toss, serve with rocket, enjoy!
