Chorizo, Pepper & Blue Cheese Frittata

Enjoy a tasty and delicious brunch or lunch in less than 30 minutes.  Liven up your frittata with chorizo, peppers blue cheese and a kick of chilli, then pop under the grill until puffed and golden - delicious!

Ingredients
  • 2 tbsp olive oil
  • 100 g chorizo (sliced)
  • 75 g pancetta (cubed)
  • 1 red onion (peeled & finely sliced)
  • 1 small red pepper (de-seeded & sliced)
  • 1 small yellow pepper (de-seeded & sliced)
  • 6 large free-range eggs (beaten)
  • 75 ml double cream
  • a good pinch of chilli flakes
  • sea salt & black pepper (freshly ground)
  • 75 g Stilton cheese (crumbled)
  • 1 tomato (sliced)
Instructions
  1. Heat the olive oil in a non-stick ovenproof frying pan and fry the chorizo and pancetta until crisp. Now add the onion and peppers, reduce the heat and cook for 5 minutes or until soft.
  2. In a large bowl mix together the beaten eggs and cream and add to the pan. Add a good pinch of chilli flakes and season generously.
  3. Cook for 2-3 minutes until the bottom is set and a little golden, then sprinkle with the Stilton and the sliced tomato.
  4. Place under a hot grill until puffed and golden on top. Serve on warmed plates, enjoy!
