Chorizo, Pepper & Blue Cheese Frittata

double cream

a good pinch of chilli flakes

Stilton cheese

Instructions

Heat the olive oil in a non-stick ovenproof frying pan and fry the chorizo and pancetta until crisp. Now add the onion and peppers, reduce the heat and cook for 5 minutes or until soft.

In a large bowl mix together the beaten eggs and cream and add to the pan. Add a good pinch of chilli flakes and season generously.

Cook for 2-3 minutes until the bottom is set and a little golden, then sprinkle with the Stilton and the sliced tomato.

Place under a hot grill until puffed and golden on top. Serve on warmed plates, enjoy!
