Chorizo & Prawn Pasta with Lime

A super quick, fresh & delicious dish that can be made in the time it takes to cook your pasta.

Ingredients
  • 1 fish stock cube
  • 250 g spaghetti
  • 1 tbsp olive oil
  • 2 garlic cloves (peeled & finely chopped)
  • 150 g chorizo (cubed)
  • 350 g raw king prawns
  • 2 tomatoes (chopped)
  • 1 tbsp red wine vinegar
  • 1 tbsp butter
  • 1 lime (juice only)
  • 1 handful fresh parsley (roughly chopped)
  • sea salt & pepper (freshly ground)
  • extra virgin olive oil (for dressing)
Instructions
  1. Place the fish stock cube in a pan of boiling water and cook the pasta as per packet instructions.
  2. In a large frying pan heat the oil over a low/medium heat and fry the garlic until it has softened. Increase the heat slightly and add the chorizo and prawns and fry for 2-3 minutes.
  3. Add the tomatoes and red wine vinegar and cook for 2-3 minutes until the liquid has thickened. Add the butter and melt through the sauce.
  4. Add the cooked pasta and stir through,parsley, drizzle with lime juice and season to taste.
  5. To serve, divide between two serving plates and drizzle over some extra virgin olive oil, enjoy!
