Chorizo, Sausage & Harissa Pasta

This spicy chorizo and sausage pasta with a creamy harissa sauce is absolutely bursting with flavour - proper comfort food.  It is so quick and easy to make and will definitely be a regular recipe in this house.

Ingredients
  • 100 g chorizo (chopped)
  • 1 onion (peeled & finely chopped)
  • 2 garlic cloves (peeled & finely chopped)
  • 300 g sausages - I used caramelised onion (skins removed)
  • 200 g pasta (I used rigatoni)
  • 2 tbsp Harissa paste
  • 2 tbsp tomato puree
  • 125 ml chicken stock
  • 150 ml double cream
  • 8 sundried tomatoes (chopped)
  • 25 g parmesan cheese (grated)
  • 2 handfuls of baby spinach
  • sea salt & pepper
Instructions
  1. Heat a large frying pan over a medium heat, add the chorizo. Fry until the oils have been released, remove the chorizo and set aside. Now add the onion, fry until softened, then add the garlic and fry for a further 30 seconds. Add in the sausage and fry until golden brown, using your wooden spoon to crumble it as it browns.
  2. Meanwhile, cook the pasta as per packet instructions, drain and reserve some pasta water.
  3. Add the harissa paste and tomato puree into the sausage mix and fry for a minute or so. Pour in the chicken stock and cream, then stir in the parmesan, sun dried tomatoes, chorizo and baby spinach. Simmer and stir for a few mins until the sauce thickens. Season to taste, then turn the heat to low.
  4. Now toss through the pasta, if the sauce is too thick add a splash of starchy pasta water.
  5. Serve with a sprinkling of parmesan, enjoy!
