Cod with a Herby Crust

A delicious quick & easy fish dish – perfect for a mid-week meal!  This recipe goes perfectly with Panzanella Salad or seasonal vegetables.

  • Preheat oven to 190°C/190°C Fan/375°F/gas mark 5. Place the cod on a lined baking tray.
  • In a small bowl mix the breadcrumbs, parsley, lemon zest and cheese.
  • Scatter over the fish. Roast in the oven for 10 minutes until golden and cooked through. Serve the Panzanella salad or seasonal vegetbles, enjoy!
