Cod with a Herby Crust

A delicious quick & easy fish dish – perfect for a mid-week meal!  This recipe goes perfectly with Panzanella Salad or seasonal vegetables.

Ingredients
  • 2 cod fillets
  • 4 tbsp breadcrumbs
  • 1 small bunch flat leaf parsley (finely chopped)
  • 1 lemon (zest only)
  • 2 tbsp cheddar cheese (grated)
Instructions
  1. Preheat oven to 190°C/190°C Fan/375°F/gas mark 5. Place the cod on a lined baking tray.
  2. In a small bowl mix the breadcrumbs, parsley, lemon zest and cheese.
  3. Scatter over the fish. Roast in the oven for 10 minutes until golden and cooked through. Serve the Panzanella salad or seasonal vegetbles, enjoy!
