Creamy Red Pesto & Chorizo Pasta

Ingredients
  • 400 g your favourite pasta
  • 200 g chorizo (sliced)
  • 200 ml double cream
  • 125 g red pesto (see recipe above)
  • 1 small handful of fresh basil (finely chopped)
  • 25 g fresh Parmesan (grated, plus extra for serving)
  • sea salt & pepper (freshly ground)
  • rocket leaves (for serving)
Instructions
  1. Bring a pan of salted water to the boil and cook as per packet instructions.
  2. Meanwhile add the chorizo to a large frying pan, then place on a low-to-medium heat and cook for just a couple of minutes until the chorizo starts to look shiny and releases oils.
  3. Add the cream, pesto, basil and the grated Parmesan, mixing well. Bring to the boil, and cook for a couple of minutes until it’s all mixed through. Season to taste.
  4. Drain the pasta but reserve some of the cooking water to add to the pasta sauce if it becomes too thick. Combine the pasta and sauce over a medium heat and stir gently, adding some pasta cooking water if it needs loosening. Serve with extra Parmesan cheese sprinkled over the top and a large handful of rocket leaves. Enjoy!
