Honey & Mustard Potato Salad

A very simple but delicious potato salad made with 3 mustard's; wholegrain, Dijon and English.  It is a great addition to any BBQ or picnic.  It is also the perfect accompaniment to grilled meat, smoked salmon, prawns or ham.  Can be served warm or cold!

Ingredients
  • 1 kg new potatoes (cut in half if large)
  • 4 tbsp olive oil
  • 1 tbsp white wine vinegar
  • 1 tbsp clear honey
  • 1 tbsp wholegrain mustard
  • 1 tsp Dijon mustard
  • 1/2 tsp English mustard
  • sea salt & pepper (freshly ground)
  • To serve
  • 3 spring onions (sliced)
Instructions
  1. Place the potatoes in a pan of boiling salted water and cook for 20 minutes or until tender,
  2. Meanwhile place the oil, honey, white wine vinegar, mustard's in a bowl, whisk through and season to taste.
  3. Drain the potatoes and stir through the dressing, sprinkle with spring onions and they are ready to serve. Enjoy!
