Lamb Malabar

This lamb malabar curry recipe is very easy to make and the results are absolutely delicious!

Ingredients
  • 2 tbsp vegetable oil or ghee
  • 2 onions (peeled & finely chopped)
  • 1 tsp turmeric
  • 1 tbsp ground coriander
  • 1 tsp ground cumin
  • 2 tsp chilli powder
  • 1/4 tsp ground cloves
  • 12 curry leaves
  • 750g boned leg of lamb (cubed)
  • 75 g creamed coconut block (coarsely grated)
  • 300 ml boiled water
  • 1 tsp salt
  • to serve
  • basmati rice & naan bread
Instructions
  1. Heat the oil or ghee in a large frying pan or casserole. Add the onions and fry until golden.
  2. Stir in the turmeric, coriander, cumin, chilli powder, cloves and curry leaves and fry for 1-2 minutes. Add the lamb and coconut and fry, stirring, until well browned.
  3. Pour in the boiled water and add the salt. Cover and simmer for 45-60 minutes or until the lamb is tender.
  4. Transfer to a warmed serving dish and serve immediately. Enjoy!
