One Pan Brunch
This brunch is packed with flavour; smoky bacon, sausages, mushrooms, chorizo, tomatoes, spinach, eggs and a sprinkling of chilli. Ingredients

smoked bacon rashers
(roughly chopped)

pork sausages - use your favourites
(chopped into bite sized pieces)

chestnut mushrooms
(halved or quartered)

handfuls of baby plum or cherry tomatoes

good pinch of chilli flakes

large handful of baby spinach leaves

Instructions

Heat the oil in a large frying pan, add the bacon and sausage and fry until golden.

Now add the mushrooms, chorizo and tomatoes, fry for 3-4 minutes or until the chorizo releases the oil. Season with chilli flakes and pepper. Add the spinach and stir through.

Make four holes in the sausage and chorizo mixture and break an egg into each one, season each one with pepper and chiili flakes. Cover the pan and fry for 2–3 minutes, or until the whites are set but the yolks remain runny.

Serve on warmed plates, topped with the eggs - enjoy!
