Prawn & Pistachio Pesto Pasta

This is such a delicious recipe and is so easy to make.  The pistachios make the most wonderful pesto served with large juicy prawns this dish is amazing.  I was gifted the prawns from Bradleys – see below for a discount code.

  • Place the pistachios, basil, Parmesan cheese, garlic and lemon zest into a blender and blitz. Gradually pour in the olive oil until you have your desired consistency. If needed add extra oil until you have a smooth and creamy consistency. Season to taste.
  • In a large frying pan add a drizzle of olive oil and the prawns, cook for for about 2 mins. Turn off the heat, squeeze over the lemon juice of 1/2 lemon and sprinkle over a pinch of chilli flakes.
  • Add the cooked pasta to the pan with the prawns along with a generous splash of the pasta cooking water. Add the pesto and toss well to combine everything until you have a silky sauce.
  • Serve with another squeeze of lemon and an extra pinch of chilli, if you like - enjoy!

Notes
