Red Velvet Cupcakes

Classic Red Velvet Cupcakes with a luscious cream cheese frosting!  Not only are they delicious, they are very quick and easy to make.

Ingredients
  • 100 g self raising flour
  • 1 tbsp cocoa powder
  • 1/2 tsp baking powder
  • 115 g butter (softened)
  • 115 g caster sugar
  • 2 free range eggs (beaten)
  • 1 tsp red food colouring
  • For the frosting
  • 200 g cream cheese
  • 200 g double cream
  • 6 tbsp icing sugar
  • 1 cupcake (crumbled for decoration)
Instructions
  1. Preheat the oven to 180°C/160°C/Gas mark 4.
  2. Sift the flour, cocoa and baking powder into a large mixing bowl. Add the butter, caster sugar, eggs and food colouring. Combine thoroughly with a wooden spoon, electric hand whisk or mixer. Spoon the mixture into the cupcake cases and place in the oven to bake for 15 minutes or until well risen and the centres spring back when lightly pressed. Transfer to a wire rack to cool.
  3. For the frosting, place the double cream, cream cheese and icing sugar into a large bowl and whisk until you get soft peaks. Swirl on the cupcakes with an icing bag and decorate with a sprinkling of cake crumbs from one of the ready made cupcakes. Enjoy!
