Salted Caramel Brownies

Oh wow!!  You will absolutely love these brownies.  They are the best… irresistibly rich, fudgy, gooey, with a salted caramel centre – they are insanely moreish!

  • Preheat the oven to 180°C/160°C Fan/350°F/gas 4.
  • Melt the butter and chocolate in a bowl over a pan of simmering water or in the microwave in 30 second blasts until melted.
  • Mix the sugar, eggs and vanilla extract with an electric whisk until the mixture is thick and creamy. Add the melted chocolate and stir through. Finally stir in the flour and salt.
  • Pour half of the the mixture into a greased and lined baking tray approximately 20cm by 30cm. Drizzle over the salted caramel and add a sprinkling of sea salt, pour over the remaining mixture. Place in the oven for 25 minutes.
  • Remove from the oven and allow to cool slightly. Drizzle with the melted chocolate and allow to cool in the tin for 20 minutes and then cut into squares. Enjoy!!
