Sausage & Chorizo Orzo

This is a delicious one pot sausage & chorizo orzo recipe.  It is quick and easy to make, creamy and a wonderfully comforting weeknight dinner.

Ingredients
  • 1 tbsp olive oil
  • 400 g sausages (cut into bite sized pieces)
  • 125 g chorizo (cut into bite sized pieces)
  • 1 small onion (peeled & finely chopped)
  • 2 cloves of garlic (peeled & finely chopped)
  • 1/2 tsp chilli flakes
  • 200 g orzo pasta
  • 450 ml chicken stock
  • 150 ml double cream
  • 75 g Parmesan cheese (finely grated, plus extra for serving)
  • 125 g fresh baby spinach
  • sea salt & pepper (freshly ground)
Instructions
  1. In a large heavy based pan heat the oil on the hob over a medium heat and brown the sausages for 5 minutes. Now add the chorizo and onions and cook for a further 5 minutes until the sausages are nicel browned and the onions have softened.
  2. Stir through the garlic, chilli flakes and orzo, cook for 30 seconds.
  3. Stir through the chicken stock and cream, bring to the boil and reduce to a simmer for 10 minutes, until the pasta had cooked and the sauce has thickened. Stir often so the pasta does not stick to the bottom of the pan.
  4. Remove the pan from the heat, stir in the Parmesan and spinach and cover with a lid for 3-5 minutes or until the sauce has thickened to your liking. Season to taste and serve immediately with a sprinkling of Parmesan - enjoy!
