Sausage & Porcini Mushroom Pasta

This creamy sausage and porcini pasta is a hearty and flavourful dish.  The perfect comfort food.

Ingredients
  • 2 tbsp oil
  • 1 small red onion (finely chopped)
  • 1 garlic clove (finely chopped)
  • 400 g sausages - I used caramelised onion (skinned and chopped)
  • 40 g dried porcini (soaked in a cup of warm water)
  • 400 g tin of chopped tomatoes
  • 3 tbsp double cream
  • 400 g pasta (cooked as per packet instructions)
  • sea salt & pepper (freshly ground)
  • Parmesan cheese (grated)
Instructions
  1. In a large frying pan heat the oil over a low heat. Add he onions and garlic and cook for 4-5 minutes until softened.
  2. Add the sausage and cook over a medium heat for 10 minutes. Now add the mushrooms and water to the pan.
  3. Add the tomatoes and allow to simmer for 20 minutes. Meanwhile, cook the pasta. Pour in the cream to the sausage and mushroom sauce, mix through and season to taste.
  4. Drain the cooked pasta and add to the pan. Reduce the heat to low and mix through. Serve with pasta and sprinkle with parmesan.
