Slow Cooker Sticky Spicy Chicken

Tender chicken thighs slow-cooked to perfection in a rich, sticky sauce made from soy, honey, garlic, and a kick of chilli. Perfect for a hassle-free, mouth-watering mid-week meal that can be prepared in minutes.  It is so delicious and will have everyone asking for seconds!

Ingredients
  • 600 g boneless and skinless chicken thighs (cut into bite sized pieces)
  • 1 tbsp cornflour
  • 100 ml chicken stock
  • 6 tbsp dark soy sauce
  • 1 tbsp garlic puree
  • 1 tbsp ginger puree
  • 1 tbsp tomato puree
  • 1 tbsp honey
  • 1 tbsp hoisin sauce
  • 1 red chilli (de-seeded & finely chopped)
  • 1 tsp sesame oil
  • 1 tsp rice vinegar
  • black pepper (freshly ground)
  • To serve
  • stir fry vegetable
  • rice
  • 1 tsp sesame seeds
  • 2 spring onions (sliced)
Instructions
  1. Place the chicken in a bowl and coat with the cornflour.
  2. Add all the ingredients to the slow cooker, except the serving ingredients. Stir through.
  3. Cook on high for 4 hours or on low for 6 hours.
  4. Serve with rice and stir fry vegetables, garnish with the sesame seeds and spring onions. Enjoy!
