Spaghetti with Roquefort & Chorizo

This is a delicious pasta dish is bursting with flavour and can be made in 20 minutes.  A perfect mid-week meal!

  • 250 g spaghetti (cooked as per packet instructions)
  • 100 g Roquefort cheese (crumbled)
  • 200 g creme fraiche
  • 200 g chorizo (cut into bite sized pieces)
  • 1 garlic clove (peeled & finely chopped)
  • 1 good pinch of chilli flakes
  • 1 large handful of rocket leaves (plus extra for serving)
  • 100 g mozzarella cheese (cut into bite sized pieces)
  • black pepper (freshly ground)
  • Parmesan cheese (freshly grated, to serve)
  1. Cook the spaghetti as per packet instructions.
  2. Meanwhile in a food processor blend together the Roquefort and creme fraiche, set aside.
  3. In a large frying pan gently fry the chorizo for 3-4 minutes over a medium heat until the oil is released. Add the garlic and a good sprinkling of chilli flakes, gently fry for 1 minute.
  4. Now add a good handful of rocket, the cooked spaghetti, the Roquefort mixture and mozzarella. Toss all the ingredients together over a low heat to warm through.
  5. Serve between two warmed pasta bowls, top with a handful of rocket and a sprinkling of Parmesan and pepper - enjoy!
