Spiced Apple Cake

This is a delicious, sticky and spiced cake with a caramelised apple topping.  It tastes wonderful served cold or just as good warm with ice cream.

  • For the spiced apples, place the apples into a large sauce pan with the orange juice, spices and sugar. Cover the pan with a lid and gently heat until the apple has softened but not falling apart. Remove from the heat and allow to cool with the lid on so the spices infuse the apples.
  • For the cake, preheat the oven to 200°C/180°C Fan/Gas mark 6. Line the base of a 23cm loose-bottomed cake tin with baking parchment. Grease the base and sides of the tin thickly with 25g of butter. Sprinkle the base with the light brown sugar and dust with cinnamon and freshly grated nutmeg.
  • Strain the apples and place on the base of the tin - which will be the top of the cake.
  • In a mixer beat the butter and caster sugar until light and fluffy, then add the vanilla. Beat in the eggs one at a time, add a tablespoon of flour with the final egg to stop curdling. Now fold in the sifted flour and baking powder and stir in the milk.
  • Cover the apples with the mixture and bake in the oven for 50 minutes, test the cake is ready by inserting a skewer into the centre and if it comes out clean the cake is ready. Allow the cake to cool in the tin for about an hour and then turn it out onto a plate - enjoy!
