For the paste

For the curry

beef fillet or stir fry beef
(thinly sliced)

To serve

Thai jasmine rice
(cooked as per packet instructions)
Instructions

For the paste, place all the ingredients into a food processor and blend until you have a smooth paste.

For the curry, heat a large frying pan and then add the oil and beef, stir fry until browned. Add the paste and cook for 1-2 minutes. Pour in the coconut milk, bring to the boil and simmer for 2-3 minutes.

Add the fish sauce and lime juice to taste. Serve with jasmine rice. Enjoy!
