The Best Chimichurri Sauce

This herby, garlicky, tangy, spicy and very green Chimichurri sauce is great on all kind of grilled meats.

Ingredients
  • 8 tbsp olive oil
  • 4 garlic cloves (peeled & roughly chopped)
  • 3 tbsp white wine vinegar
  • 1/2 tsp salt
  • 1/4 tsp ground cumin
  • 1/4 tsp chilli flakes
  • 1/4 tsp freshly ground pepper
  • 1 handful of fresh coriander leaves
  • 2 tbsp dried oregano
  • 1 handful fresh flat leaf parsley (stems removed)
Instructions
  1. Place all the ingredients into a blender and pulse 2 - 3 times.
  2. Scrape down the sides using a spatula and repeat the pulsing until you have a thick green sauce. Enjoy!
