A cool, creamy, fresh and simple dip - a great accompaniment to Greek dishes.

  • 1/2 cucumber (halved, de-seeded & grated)
  • 170 g Greek yogurt
  • 1 garlic clove (peeled & crushed)
  • 1 tbsp extra virgin olive oil
  • 1/2 tbsp lemon juice
  • 1 small handful of fresh mint (finely chopped)
  • freshly ground sea salt
  1. Squeeze all the liquid out of the grated cucumber and place in a serving bowl.
  2. Add the yogurt, garlic, oil, lemon and mint into the bowl and mix through. Season to taste. Add more lemon juice or mint if preferred.
  3. Serve the tzatziki immediately or chill for later. Leftover tzatziki keeps for about 4 days. Enjoy!
