Ultimate Smoked Salmon & Scrambled Eggs

A very quick but very delicious and indulgent breakfast!

Ingredients
  • 8 free range eggs
  • 1 splash of double cream
  • black pepper (freshly ground)
  • 50 g butter
  • 150 g smoked salmon slices or trimmings
  • 2 tbsp fresh chives (chopped)
  • 4 slices of bread or muffins (toasted & buttered)
Instructions
  1. In a bowl, beat together the eggs and add a splash of cream with freshly ground pepper.
  2. Over a medium to low heat melt the butter in a non-stick pan. Add the eggs and gently whisk continuously until the eggs are softly scrambled.
  3. Meanwhile, toast the bread or muffins and butter. When the eggs are cooked remove the pan from the heat and fold through half the salmon and a half the chives.
  4. Place 2 slices of toast on each plate and spoon the scrambled egg and top with the remaining and a sprinkling of chives. Enjoy!
