Best Greek Chicken Marinade

This simple Greek chicken marinade infuses the chicken with lemon, garlic and oregano and keep the chicken super juicy and tender.  Delicious and easy to make!

  • 8 chicken thighs (bone in, skin on)
  • For the marinade
  • 200 g Greek yogurt
  • 75 ml lemon juice
  • 6 garlic cloves (peeled & finely chopped)
  • 2 tbsp olive oil
  • 2 tbsp white wine vinegar
  • 1 1/2 tbsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • To serve

  1. Mix all the marinade ingredients in a bowl.
  2. Add the chicken, coat well, cover and marinade in the fridge for a minimum of 3 hours and up to 24 hours.
  3. Preheat the oven to Gas mark 5/200°C/180°C fan. Line a baking tray and bake in the oven for 30 minutes. Reserve the remaining marinade.
  4. Remove from the oven and brush with the remaining marinade and back for a further 15 minutes or until golden and crisp.
  5. Allow to rest for a few minutes and serve with Greek salad. Enjoy!
