Cherry & Almond Crumble

Ingredients
    For the filling
  • 800 g frozen black cherries
  • 1 tbsp cornflour
  • 1 tbsp granulated sugar
  • For the topping
  • 100 g butter
  • 130 g plain flour
  • 70 g ground almonds
  • 20 g granulated sugar
  • 30 g porridge oats
  • 30 g demerara sugar
  • 1 small handful of flaked almonds
Instructions
  1. Preheat the oven to 200°C/180°C Fan/Gas mark 6.
  2. Add the cherries to a pan and heat gently until they are defrosted and start to release their juices. Add the cornflour and sugar, mix through and cook on a ow heat for 5 minutes or until the sauce starts to thicken. Pour the cherries into an ovenproof dish.
  3. In a bowl mix the butter, flour and ground almonds by rubbing with your fingertips until you get a fine breadcrumb. Add the sugar and oats, mix well.
  4. Scatter the crumble mixture over the cherries and sprinkle with the almonds. Place on a baking tray and cook for 40 to 50 minutes until the topping is crisp and golden and the fruity juices are bubbling around the edges.
  5. Leave to cool for 5 minutes and serve with cream, ice-cream or custard. Enjoy!
