Creamy Tuscan Chicken Pasta

This is a wonderfully creamy Tuscan chicken pasta with sundried tomatoes, garlic, Parmesan and spinach.  A delicious comforting pasta dish made in 30 minutes -  the perfect mid week meal.

Ingredients
  • 2 tbsp olive oil
  • 500 g chicken breasts (skinned)
  • sea salt & pepper (freshly ground)
  • 2 tbsp butter
  • 120 g sun dried tomatoes (roughly chopped)
  • 150 g baby spinach leaves
  • 12 cherry tomatoes (halved)
  • 2 garlic cloves (peeled & crushed)
  • 300 g double cream
  • 120 g Parmesan cheese (grated)
  • 250 g rigatoni or penne (cooked as per packet instuctions)
Instructions
  1. Heat the oil in a large frying pan on a medium high heat. Season the chicken and add to the pan, cook on both sides and set aside. When slightly cooled cut into bite sized pieces.
  2. Reduce to a medium heat. Add the butter to the pan, with the sun dried tomatoes, spinach, cherry tomatoes and garlic. Stir through the ingredients and allow the spinach to wilt.
  3. Now add the cream until it begins to simmer. Remove from the heat and add the Italian seasoning and Parmesan, stir through.
  4. Now stir through the cooked pasta and chicken, it is now ready to serve. Enjoy!
