Eggs Royale Hash – Smoked Salmon Hash
Eggs Royale Hash - the perfect Sunday Brunch. Delicious smoked salmon served with crispy golden potatoes topped with a poached egg and silky hollandaise sauce.
For this recipe to save time I used a readymade fresh hollandaise sauce.

Ingredients

new potatoes
(halved or quartered)

unsalted butter

small onion
(peeled & finely sliced)

fresh dill
(chooped)

capers

smoked salmon
(sliced)

black pepper
(freshly ground)

ready-made hollandaise sauce
(found in supermarkets chiller aisles)
Instructions

Place the potatoes on a pan of cold salted water and cook for 10 - 12 minutes, until tender. Drain and set aside.

Meanwhile , melt the butter in a large frying pan and gently fry the onions over a medium heat until softened.

Add the potatoes to the pan and fry until golden brown and crisp or add to an air fryer for 10 - 15 minutes at 180 C.

Add the dill, capers and smoked salmon to the onions and potatoes, season with pepper and stir through.

Heat a pan of water and gently break the eggs into the water. Cook for 3-5 minutes or until the whites are firm and cooked to your liken. Meanwhile warm through the readymade hollandaise as per packet instructions.

Divide the potato mixture between two plates. Place a poached egg on top and drizzle over the hollandaise. Enjoy!
