Lamb Steaks with Mint & Lemon Pesto
This is a delicious quick & easy meal that can be made in less than 30 minutes. The fresh mint pesto is full of flavour and is a great alternative to mint sauce.

Ingredients
For the pesto

toasted pine nuts

large handful fresh mint leaves

small handful fresh flat leaf parsley

lemon
(zest only)

Parmesan cheese

extra virgin olive oil

(freshly ground)
For the lamb

drizzle olive oil

lamb leg steaks
Instructions

For the pesto, place the pine nuts, mint, parsley, lemon zest, Parmesan, mint sauce and oil into a blender. Blitz and season to taste, you can add more mint sauce to your liken and set aside.

For the lamb steaks, heat a large frying pan over a medium to high heat and drizzle with oil. Season the steaks and fry for 3 minutes each side (for medium) if you prefer well done cook for a further 1 to 2 minutes. Allow the steaks to rest for a few minutes.

Serve the lamb with seasonal vegetables and a good dollop of pesto. Enjoy!
