Lamb Steaks with Mint & Lemon Pesto

This is a delicious quick & easy meal that can be made in less than 30 minutes.  The fresh mint pesto is full of flavour and is a great alternative to mint sauce.

Ingredients
    For the pesto
  • 50 g toasted pine nuts
  • 1 large handful fresh mint leaves
  • 1 small handful fresh flat leaf parsley
  • 1 lemon (zest only)
  • 15 g Parmesan cheese (grated)
  • 1 tsp mint sauce
  • 125 ml extra virgin olive oil
  • sea salt & pepper (freshly ground)
  • For the lamb
  • 1 drizzle olive oil
  • 4 lamb leg steaks
Instructions
  1. For the pesto, place the pine nuts, mint, parsley, lemon zest, Parmesan, mint sauce and oil into a blender. Blitz and season to taste, you can add more mint sauce to your liken and set aside.
  2. For the lamb steaks, heat a large frying pan over a medium to high heat and drizzle with oil. Season the steaks and fry for 3 minutes each side (for medium) if you prefer well done cook for a further 1 to 2 minutes. Allow the steaks to rest for a few minutes.
  3. Serve the lamb with seasonal vegetables and a good dollop of pesto. Enjoy!
