Nduja, Gorgonzola & Mascarpone Pasta

A very simple but highly flavourful quick and easy pasta dish.  This Nduja pasta is so delicious and wonderfully creamy - the perfect mid-week treat.

Ingredients
  • 170 g Gorgonzola Dolce
  • 110 g Mascarpone
  • 175 ml double cream
  • 70 g Nduja paste
  • 500 g pasta (cooked as per packet instructions)
  • To serve
  • Parmesan (finely grated)
  • 4 handfuls of rocket leaves
  • 4 tbsp pine nuts (toasted)
Instructions
  1. Whilst the pasta is cooking as per packet instructions, add the Gorgonzola, Mascarpone, cream and Nduja into a small pan. Heat over a medium heat stir frequently and bring to the boil.
  2. Reduce the heat to a simmer.
  3. Drain the pasta and reserve some of the cooking water.
  4. Add the pasta to the sauce and a little pasta water if the sauce is too thick.
  5. Serve the pasta with a handful of rocket, sprinkling of Parmesan and pine nuts, enjoy!
