Orange & Sultana Madeira Cake

This Madeira cake recipe is very easy to make, delicious and trusted! This is not the most traditional recipe but it is light, soft, moist with a firm texture - made using oil instead of butter. Perfect for everyday baking or can be decorated for occasions.

Ingredients
  • 150 g caster sugar
  • 200 ml vegetable oil
  • 1 tsp vanilla essence
  • 200 ml freshly squeezed orange juice
  • 2 oranges (zest only)
  • 3 eggs (beaten)
  • 100 g sultanas
  • 360 g self raising flour
  • 1 tsp baking powder
Instructions
  1. Preheat the oven to 200°C/180°C Fan/Gas Mark 6 - grease and line a 23cm springform cake tin.
  2. Place the sugar, vegetable oil, vanilla extract, orange juice, zest and eggs into a mixer and mix for 2-3 minutes on medium speed, until well combined. Now add the sultanas and mix through.
  3. Sift the flour and baking powder into the mixture and gently fold through until fully combined. Pour into the prepared cake tin.
  4. Bake for 40-45 minutes, until golden and a skewer inserted into the centre comes out clean. Leave to cool for 5 minutes and then place on a wire rack to cool completely. Enjoy!
