Pasta & Prawns in a Nduja Cream Sauce

This is such a quick and easy recipe to make.  Juicy prawns in a spicy cream sauce perfect for a delicious mid-week meal.  These wonderful prawns were gifted by Bradley's (they deliver throughout the UK) see below for a 15% discount code.

Ingredients
  • 200 g pasta (I used spaghetti)
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 1 small onion (peeled & finely chopped)
  • 2 garlic cloves (peeled & finely chopped)
  • 300 g King prawns
  • 2 tsp nduja paste (add more if you like it extra spicy)
  • 150 ml double cream
  • sea salt & pepper (freshly ground)
  • 1/2 lemon (juice only)
  • 1 handful of flat leaf parsley (finely chopped)
  • 1 sprinkling of chilli flakes (optional)
Instructions
  1. Cook the pasta as per packet instructions.
  2. Meanwhile, In a frying pan add the butter along with the olive oil. Fry the onions over a low heat for 2-3 minutes then add the garlic and gently fry for another minute.
  3. Add the nduja, mix through and continue to fry for another couple of minutes. Pour in the cream followed by the prawns. Simmer for 4-6 minutes depending on the size.
  4. Once the prawns are cooked season, add the lemon juice and mix through the parsley. If you feel it’s too thick add a little splash of the pasta water to loosen it up. Mix through the pasta and serve with a sprinkling of chilli flakes. Enjoy!
