Prawn & Asparagus Pasta

Ingredients
  • 250 g spaghetti or your favourite pasta (cooked as per packet instructions)
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 2 garlic cloves (peeled & finely chopped)
  • 1/4 - 1/2 tsp chilli flakes
  • 250 g asparagus (spears trimmed)
  • 300 g King prawns
  • 1 tsp Italian seasoning
  • sea salt & pepper (freshly ground)
  • 75 ml vegetable stock
  • 1/2 lemon (juice & zest)
Instructions
  1. Cook the pasta as per packet instructions.
  2. Heat 1 tbsp butter and 1 tbsp oil in a large frying pan, add the garlic and chiili flakes. Fry for a minute then add the asparagus. Toss in the pan for a couple of minutes then remove and set aside.
  3. Add another 1 tbsp butter and 1 tbsp oil then add the prawns. Cook for a minute each side until turning pink. Then add the Italian seasoning, salt and pepper, stock and lemon juice. Allow to bubble, now stir the asparagus.
  4. Drain the pasta, reserving some of the cooking water. Toss it through the mixture in the pan, add some of the cooking water if you feel it needs to be a bit looser. Serve immediately with a sprinkling of chiili flakes and lemon zest. Enjoy!
