Sausage, Potato, Vegetable & Gravy Traybake

Ingredients
  • 750 g baby potatoes (halved)
  • 4 carrots (peeled & cut into chunks)
  • 2 red onions (peeled & cut into wedges)
  • 2 garlic (peeled & crushed)
  • 2 tbsp olive oil
  • 2 tsp dried oregano
  • 2 tsp dried thyme
  • 8 sausages
  • For the gravy
  • 30 g butter (melted)
  • 2 1/2 tbsp plain flour
  • 500 ml beef stock
  • Green vegetables
  • 200 g Greens - I used tender stems and sugar snap peas (I used microwavable steamed vegetables.)
Instructions
  1. Preheat the oven to 200°C/180°C Fan/Gas mark 6. Place the potatoes, carrots, onions, garlic, oil, herbs and seasoning into a large bowl and toss everything together. Now add the sausages and toss through.
  2. Now add to a roasting tin, place the vegetables at the bottom and top with the sausages.
  3. For the gravy, add the flour to the melted butter and whisk through, now slowly add the beef stock
  4. Pour the gravy around the edges of the roasting tin. Now place in the oven and bake for 25 minutes. Turn over the sausages and return to the oven for a further 20 minutes or until the sausages are browned and the potatoes are cooked through. If the gravy is very thick add a splash of boiling water. Or if too thin, remove the sausages and vegetables and return the gravy to the oven for 5 minutes or until thickened.
  5. Top with the greens and serve the sausages with the vegetables and gravy - enjoy!
