Scampi with Tartare Sauce

This has to be the best Scampi that I have ever tasted.  The scampi was gifted by Bradley's - see a discount code below.  This is a delicious recipe - best served with tartare sauce and homemade chips.

Ingredients
  • 454 g peeled scampi (defrosted)
  • 3 tbsp plain flour
  • sea salt & pepper (freshly ground)
  • cayenne pepper
  • 2 free range eggs (beaten)
  • 100 g panko breadcrumbs
  • vegetable oil for deep frying
  • To serve
  • tartare sauce
  • lemon wedges
  • homemade chips
Instructions
  1. Pat dry the scampi with kitchen paper. Season the flour with salt & pepper and a good pinch of cayenne pepper. Now dust the scampi in the seasoned flour, dip to coat in the egg, then roll in the breadcrumbs.
  2. Heat the oil in a large high-sided pan or deep fryer to 190°C, or until a scampi-size piece of bread turns golden brown and crisp in 2 minutes. Add the scampi with a slotted spoon, cooking in 3 batches, for 2-3 minutes for each batch. Remove and drain on kitchen paper. Serve with the tartare sauce, chunky chips and lemon wedges.
