Spaghetti alla Carbonara

A simple, classic and delicious dish that you will want to make again and again!  This is not the most traditional recipe as I have used a good splash of white wine.

Ingredients
  • 1 tbsp olive oil
  • 250 g pancetta (cut into cubes)
  • 100 g butter
  • 150 ml dry white wine
  • 4 whole eggs
  • 2 egg yolks
  • 2 tbsp fresh flat leaf parsley (finely chopped)
  • 100 g Parmesan cheese (grated, plus extra for serving)
  • 400 g spaghetti (cooked as per packet instructions)
  • sea salt & pepper (freshly ground)
Instructions
  1. Heat the oil in a large frying pan and then add the pancetta or bacon and fry until golden. Add half of the butter and wine and let simmer for 2-4 minutes until reduced slightly.
  2. In a mixing bowl, beat the eggs and then add the parsley and parmesan, season and mix through.
  3. Cook the spaghetti as per packet instructions, drain and add to the pancetta or bacon and mix through. Pour in the egg mixture and stir through until the warmth from the pasta cooks the egg.
  4. Add the remaining butter, season to taste and serve immediately with some extra parmesan... enjoy!
