Steak & Blue Cheese sauce

A succulent steak served with a irresistible blue cheese sauce made with Stilton.  This quick and easy recipe combines the tender juiciness of the steak with the bold and creamy cheese sauce.

Ingredients
  • 2 steaks of your choice (removed from the fridge at leas 30 minutes before cooking)
  • 2 tbsp vegetable oil
  • sea salt & pepper (freshly ground)
  • 2 garlic cloves (skin left on & slightly crushed)
  • 2 sprigs of rosemary
  • 30 g butter
  • For the blue sauce
  • 125 ml beef stock
  • 200 ml double cream (at room temperature)
  • 100 g Stilton (crumbled)
  • 1 large tbsp fresh chives (chopped)

Instructions
  1. Heat a large frying pan to a high heat. Pat dry the steaks with papers towels, then sprinkle with salt and pepper on each side. Drizzle over the oil and rub into the meat. When the pan is smoking hot add the steaks. For medium rare with a steak approx 2-2.5cm thick fry for 2 mins. Then turnover.
  2. Add in your butter, rosemary & garlic and spoon the butter over the steaks for another 2mins. Remove steaks from pan & leave to rest on a warmed plate.
  3. Reduce the heat to a medium and pour in beef stock. De-glaze the pan by scraping off any flavour from the pan, then pour in cream, allow to simmer until it has thickened. Now remove the rosemary and garlic, then add in blue cheese and chives.
  4. Continue to simmer until the cheese has melted and the sauce has thickened. Season with some freshly ground pepper. Serve the steak with chips and drizzle over the sauce - enjoy!
