The Ultimate Chicken Marinade

The ultimate marinade for juicy chicken - it is easy and versatile, made with simple ingredients.  The perfect recipe for the barbecue, air fryer or oven.

Ingredients
  • 1 kg chicken thighs
  • 4 tbsp olive oil
  • 4 tbsp soft dark brown sugar
  • 3 tbsp soy sauce
  • 3 tbsp lemon juice
  • 1 tbsp Worcestershire sauce
  • 2 tbsp balsamic vinegar
  • 4 garlic cloves (peeled & crushed)
  • 1 tsp sea salt
  • 1 tsp pepper
Instructions
  1. In a bowl mix together all the marinade ingredients,
  2. Place the chicken thighs in a large freezer bag and pour over the marinade. Allow the chicken to marinade in the fridge for at least 30 minutes or up to 4 hours.
  3. Grill on the barbecue until cooked through or oven bake. To oven bake preheat the oven to 220°C/200°C Fan/Gas mark 7. Put the chicken on a baking tray. Bake in the oven for 25-30 minutes. Decrease the heat of the oven to 200°C/180°C Fan/Gas mark 6 and cook for a further 15-20 minutes, until the chicken is cooked through.
  4. Let the chicken rest for 5 minutes and serve with a delicious summer salad. Enjoy!
