Cod topped with Tartare Sauce and a Lime, Coriander & Gruyere Crumb

Ingredients
  • 4 cod fillets or loins
  • 1 lime (juice & zest)
  • 4 tbsp tartare sauce
  • 4 tbsp white breadcrumbs
  • 4 tbsp Gruyere cheese (grated)
  • 2 tbsp fresh coriander (finely chopped)
  • 1 pinch of cayenne pepper
  • sea salt & pepper (freshly ground)
Instructions
  1. Preheat the oven to 230°C/210°C fan/450°F/Gas Mark 8.
  2. Now place the cod fillets onto a baking tray lined with foil and greased. Squeeze the juice of the lime over the fillets and season. Spread the tartare sauce over each fillet.
  3. In a small bowl mix together the breadcrumbs, cheese, coriander, lime zest and cayenne pepper. Now sprinkle over the fillets and season to taste.
  4. Place the baking tray in the oven and cook for 10 minutes until the topping is golden brown & crispy and the cod is cooked through. Serve with seasonal vegetables - enjoy!
