Crushed New Potatoes with Gruyere & Spring Onions

Take new potatoes to a new level with these incredibly tasty crushed potatoes, with Gruyere, spring onions, cornichons and capers for extra flavour. Quick and easy to make, this is the perfect side dish for any mid-week meal especially fish! Serving suggestion:  Cod topped with Tartare Sauce and a Lime, Coriander & Gruyere Crumb

Ingredients
  • 750 g new potatoes (halved if large)
  • 15 g butter
  • 75 g Gruyere cheese (grated)
  • 3 spring onions (sliced diagonally)
  • 1 tbsp capers (drained)
  • 50 g cornichon (sliced)
  • 1 tbsp fresh flat leaf parsley (finely chopped)
  • sea salt & pepper (freshly ground)
Instructions
  1. Place the potatoes in a large pan of salted water and boil until tender. Now drain and roughly crush with a potato masher or fork.
  2. Now add the butter, spring onions, cheese, capers and cornichons, fold through. Season to taste, sprinkle with parsley and place in a serving dish to serve - enjoy!
