(sliced diagonally)

capers
(drained)

cornichon

fresh flat leaf parsley
(finely chopped)

(freshly ground)
Instructions

Place the potatoes in a large pan of salted water and boil until tender. Now drain and roughly crush with a potato masher or fork.

Now add the butter, spring onions, cheese, capers and cornichons, fold through. Season to taste, sprinkle with parsley and place in a serving dish to serve - enjoy!
