Festive Salmon

This festive salmon is a delicious crowd pleaser for over the Christmas holidays.  This whole side of salmon is baked in a stunning pomegranate and maple glaze, it is so quick and easy to make. Ingredients
  • 1 whole side of salmon fillet
  • 15 g butter
  • 4 tbsp pomegranate molasses
  • 4 tbsp maple syrup
  • 1 tsp dried rosemary
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • rosemary sprigs (to decorate)
  • pomegranate seeds (to decorate)
Instructions
  1. Preheat the oven to 180°C/160°C Fan/400°F/Gas 5.
  2. In a pan melt the butter and add the pomegranate molasses, maple syrup, dried rosemary, salt and pepper. Bring to the boil for 4-5 minutes and allow to cool.
  3. Place the salmon on a lined baking tray and pour over the glaze until covered. Place in the oven and allow to cook for 15-20 minutes until cooked through and flaking. The cooking time will depend on the size of the fillet. Drizzle over some of the glaze that has ran off the salmon.
  4. Place on a serving plate and decorate with the rosemary sprigs by placing them around the salmon and scattering the pomegranate seeds on top. Serve with seasonal vegetables and roasted potatoes. Enjoy!
