Glaze Baked Barramundi

Ingredients
  • 4 Barramundi fillets
  • For the glaze
  • 2 tbsp cornflour (mixed with 2tbsp water)
  • 5 tbsp dark soy sauce
  • 4 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tsp sriracha sauce
  • 1 garlic clove (crushed)
  • 1 tsp fresh ginger (grated)
  • 1/2 tsp Chinese five spice
  • 1/4 tsp pepper
  • To serve
  • sesame seeds
  • spring onion (sliced)
  • stir fried seasonal vegetables
  • rice
Instructions
  1. Preheat the oven to 180°C/160°C fan assisted/Gas mark 5.
  2. In a small bowl mix the cornflour and water and set aside. Now in a small pan add the remaining glaze ingredients. Heat over a medium heat and simmer for 2 minutes. Now stir through the cornflour for 2 minutes until you have a thick paste.
  3. Place the fillets onto a baking tray and brush all over with the glaze.
  4. Place in the oven for 15 minutes and then caramelise under the grill for 3 minutes.
  5. To serve sprinkle with sesame seeds and spring onions, stir fried vegetables and rice - enjoy!
