Italian Chicken Salad
This salad brings together some delicious flavours and ingredients from Italy in a dish that is super tasty, fresh and easy to prepare!

For the salad

red onion
(peeled & sliced)

baby plum tomatoes

(to drizzle)
Instructions

Place the chicken thighs and marinade ingredients into a zip lock bag and massage all the ingredients into the chicken. Allow to marinade in the fridge for 30 minutes to 2 hours.

Preheat the oven to Gas mark 5/200°C/180°C fan. Line a baking tray and bake in the oven for 45-50 minutes, basting occasionally until the chicken is browned and crispy. Remove from the oven and set aside to rest.

Meanwhile put the onion, tomatoes, rocket and olives into a salad bowl and season to taste.

Scatter with the mozzarella and toss through. Now drizzle over the oil. Serve the salad with the chicken, enjoy!
