Italian Chicken Salad

This salad brings together some delicious flavours and ingredients from Italy in a dish that is super tasty, fresh and easy to prepare!

Ingredients
  • 1 kg chicken thighs
  • 50 ml olive oil
  • 1 tbsp white wine vinegar
  • 1 tbsp garlic puree
  • 1 tbsp Italian seasoning
  • 1 lemon (juice & zest)
  • 1 tsp dark brown sugar
  • 1 small handful of basil (finely chopped)
  • For the salad
  • 1 red onion (peeled & sliced)
  • 20 baby plum tomatoes
  • 100 g olives
  • 150 g mozarella pearls
  • 60 g rocket
  • extra virgin olive oil (to drizzle)
Instructions
  1. Place the chicken thighs and marinade ingredients into a zip lock bag and massage all the ingredients into the chicken. Allow to marinade in the fridge for 30 minutes to 2 hours.
  2. Preheat the oven to Gas mark 5/200°C/180°C fan. Line a baking tray and bake in the oven for 45-50 minutes, basting occasionally until the chicken is browned and crispy. Remove from the oven and set aside to rest.
  3. Meanwhile put the onion, tomatoes, rocket and olives into a salad bowl and season to taste.
  4. Scatter with the mozzarella and toss through. Now drizzle over the oil. Serve the salad with the chicken, enjoy!
