Prawn & Pistachio Pesto Pasta

Pistachio Pesto Spaghetti with King Prawns is a fresh, vibrant twist on a classic pasta dish.  Sweet king prawns are lightly pan-fried with a squeeze of lemon and a touch of chilli, then tossed together with spaghetti and a homemade pistachio pesto. The pesto combines basil, Parmesan, garlic, lemon zest, and toasted pistachios for a rich, nutty flavour that pairs perfectly with seafood.  Quick enough for a weeknight dinner yet impressive enough for entertaining, this dish is a guaranteed crowd-pleaser.

Ingredients
  • 75 g pistachios
  • 1 large bunch of basil
  • 50 g Parmesan cheese (grated)
  • 1 garlic clove
  • 1 lemon (zest & juice)
  • olive oil
  • sea salt & pepper (freshly ground)
  • 400 g spaghetti (cooked per packet instructions)
  • 400 g King prawns
  • 1 pinch of chilli flakes
Instructions
  1. Place the pistachios, basil, Parmesan cheese, garlic and lemon zest into a blender and blitz. Gradually pour in the olive oil until you have your desired consistency. If needed add extra oil until you have a smooth and creamy consistency. Season to taste.
  2. In a large frying pan add a drizzle of olive oil and the prawns, cook for for about 2 mins. Turn off the heat, squeeze over the lemon juice of 1/2 lemon and sprinkle over a pinch of chilli flakes.
  3. Add the cooked pasta to the pan with the prawns along with a generous splash of the pasta cooking water. Add the pesto and toss well to combine everything until you have a silky sauce.
  4. Serve with another squeeze of lemon and an extra pinch of chilli, if you like - enjoy!
