Salmon with Mustard & Gruyere Herb Crust

This mustard & Gruyere herb crust salmon dish is absolutely delicious - it can be made in less than 30 minutes!

Ingredients
    For the crust
  • 25 g Gruyere cheese (grated)
  • 15 g mature cheddar
  • 1 slice of white bread (crusts removed)
  • 4 sprigs of thyme (leaves only)
  • 4 tbsp fresh flat leaf parsley (roughly chopped)
  • 50 g butter (softened)
  • For the salmon
  • 2 x 200 g salmon fillets
  • 2 tsp Dijon mustard
  • seasonal vegetables (to serve)
Instructions
  1. For the crust, put all the crust ingredients into a food processor and blitz until smooth. Spread the mixture onto a lined baking tray and place in the freezer for 5-10 minutes.
  2. For the salmon, preheat the oven to 200°C/180°C Fan/400°F/Gas 6.
  3. Place the salmon fillets on a lined baking tray, season with salt and pepper and then brush with the mustard.
  4. Remove the crust from the freezer and cut into rectangles and place on top of the salmon. Place the salmon in the oven for 10 - 15 minutes until the crust starts to go golden. Remove from the oven and allow to rest, serve with seasonal vegetables. Enjoy!
