Three Cheese, Caramelised Onion & Potato Pasty

Ingredients
  • 15 g butter
  • 1 onion (peeled and finely chopped)
  • 1 tbsp caster sugar
  • 1 tbsp olive oil
  • 300 g potatoes (peeled & finely diced)
  • 50 g extra mature cheddar cheese (grated)
  • 50 g Gruyere (grated)
  • 50 g Stiltion (crumbled)
  • 4 tbsp double cream
  • 1/2 tbsp Dijon mustard
  • 1 handful flat leaf parsley (finely chopped)
  • sea salt & pepper (freshly ground)
  • 1 sheet of ready rolled puff pastry
  • 1-2 egg yolks (beaten)
  • 1 splash of milk
Instructions
  1. In a large frying pan heat the butter and add the onions and sugar, fry for 5-6 minutes until the onions begin to caramelise. Remove from the pan and set aside.
  2. Now heat the oil in a large frying pan and gently fry the finely diced potatoes until softened and golden. Place in a bowl with the onions and allow to cool.
  3. Now add the cheese, cream, mustard, parsley and season to taste. Mix until fully combined.
  4. Unroll the sheet of pastry and cut into four rectangles. Divide the filling into four, roll into a tight ball and place on one side of each rectangle. Place the egg and a splash of milk in a small bowl and brush around the edges. Fold the pastry over and seal the edges. with your fingers. Place in the fridge.
  5. Preheat the oven to 200°C/180°C fan/ Gas Mark 6.
  6. Using a fork, press down around the outside of each pasty. Place on a lined oven tray and slice some steam holes in each pasty . Brush with the egg wash and place in the oven for 15-20 minutes. After about 10-12 minutes brush the pasties with some more egg wash. Keep an eye on them as they can bake quite fast. Remove from the oven and place on a wired rack. Serve warm or cold - enjoy!
