Marinated Feta – with Chilli, Honey & Sundried Tomatoes

Turn a block of feta into something truly special with this easy, flavour-packed marinated feta recipe. Creamy feta cubes are bathed in a punchy mix of extra virgin olive oil, red wine vinegar, honey, garlic, shallots, fragrant oregano, and a hint of chilli heat—elevated further with sweet, tangy chopped sundried tomatoes. Fresh parsley brings brightness, balancing the rich, savoury flavours.

This versatile dish is perfect for grazing boards, spooned over warm flatbreads, tossed into salads or pasta, or served alongside grilled vegetables and meats. It also makes a fantastic gift when packed into a jar. A make-ahead marvel that only gets better with time—ideal for entertaining, meal prep, or elevating any summer spread.

  • In a small jug whisk together the extra virgin olive oil, red wine vinegar, shallots, sundried tomatoes, honey, parsley, oregano and chilli flakes.
  • Pour some of the marinade into a large shallow dish. Now add the feta cubes and then pour over the remaining marinade, make sure all the cubes are coated in the marinade.
  • Cover the dish with cling film and allow to marinate in the fridge until needed (2 hours minimum, 4 hours best). Whilst marinating gently toss the feta every now and then. When ready to use remove from the fridge 20 minutes before. This will store in the fridge for 2-3 days. Enjoy!
