Creamy Sausage, ‘Nduja Pasta with Mascarpone & Lemon

Tonight I made a delicious pasta dish with sausage, Nduja, mascarpone, and zesty lemon. This delectable comfort food combines the richness of sausage with the fiery kick of Nduja. The creamy mascarpone perfectly balances the boldness of the sausage, creating a velvety and luscious sauce.

The hint of lemon provides a refreshing and vibrant twist, cutting through the richness and enhancing the overall flavour. This dish is comforting with an explosion of taste that will satisfy your cravings on a chilly night or any time of the year.

  • Heat the olive oil in a large frying pan and add the sausage and 'nduja, really break it up in the pan with a spoon. Fry for a few minutes until the meat is browned and cooked through, crush until it resembles mince. Set aside.
  • Add more oil to he pan if needed and add the onions, cooking until softened. Now add the garlic and rosemary, cook for a further 30 seconds.
  • Deglaze the pan with red wine and then add the tomatoes and cooked sausages. Cook for 10-15 minutes, or until the mixture has thickened.
  • Meanwhile cook the pasta as per packet instructions.
  • Remove the sausage mixture from heat and stir in the mascarpone cheese, lemon zest, lemon juice and parsley. Taste the sauce and season with salt and black pepper.
  • Toss the pasta through the sauce and serve, top with a sprinkling of Parmesan, lemon zest & parsley. Enjoy!
