Roasted Vegetable Couscous with Grilled Cheese

Toss vibrant veggies in olive oil, roast until caramelised. Fluff up the couscous and top with gooey, golden grilled cheese slices. A quick, hearty, and delicious meal!

  • Preheat oven to 200°C /180°C fan / gas mark 6. In a large roasting tin mix tomatoes, onion, peppers and courgettes with 2tbsp oil, oregano and seasoning. Spread out in a single layer and roast in the oven for about 30 minutes or until tender.
  • Place the couscous into a bowl and prepare as per packet instructions. When ready fluff up the couscous with a fork. Season to taste and stir through the roasted vegetables.
  • Meanwhile, heat remaining oil in a frying pan over high heat. Add cheese and fry for 30sec on each side, until golden and set aside. Serve the couscous topped with cheese and sprinkled with some oregano. Enjoy!
