A delicious, quick & easy dish to make! Chorizo and Prawns are a match made in heaven!
- In a large frying pan or wok heat the olive oil and fry the chorizo on a medium heat until it changes colour. Add the onion and cook for 3 minutes or until softened. Stir in the garlic and smoked paprika and cook for a further minute, stir continuously.
- Add the rice, tomatoes and stock and bring to the boil for one minute, season to taste. Reduce the heat and simmer for 10 minutes with the lid on.
- Stir in the prawns and parsley, cover and cook for a further 5 minutes until the rice is tender.
- Serve in warmed bowls, enjoy!
